Recipe: No-Bake Granola

This no-bake granola recipe is utterly delicious, fairly quick and easy to make and does not use refined sugar. The bars make an excellent snack for work or when you’re on the go and they are super filling!

Time: approx. 20-30 mins to make (and an additional 1-2 hours to chill)

4 Cups of Assorted Nuts (we recommend cashews, walnuts and pecans)

1 Cup of Desiccated Coconut

1 Cup of Dried Fruit (dates, raisins, etc)

1/3 Cup of Coconut Oil

1/3 Cup of Almond Butter

1/4 Cup of Raw Honey

1 tsp. Vanilla Extract

1 tsp. Cinnamon

1 tsp. Sea Salt (or to taste)

(Warning: definitely not suitable for people with nut allergies!)

Roughly chop half of the nuts and put the other half in a blender. Blend until the nuts are a soft powder. In a small saucepan over a medium-low heat, add the coconut oil, almond butter, honey, vanilla and cinnamon. Heat until bubbles start to form and then remove from the heat. In a bowl, combine the nuts, almond butter mixture and the dried fruit. Pour the mixture into a dish lined with parchment paper and press down with a spatula. Allow to cool to room temperature and then chill in the fridge for 1-2 hours. The mixture should ‘set’ and become firm enough to slice into bars. Keep the leftovers in the fridge.
